Pork U is a barbecue cooking class that is designed and intended to transform the average or beginner backyard cook into an outstanding amateur chef. Most classes that you see on the web are structured to teach the competition team pitmaster advanced techniques that he or she will use to achieve higher scores in competition cooking. They will spend a great deal of time, for example, on how to garnish your blind box for the judges, or what a particular contest wants to see in your presentation.
At Pork U, we will touch upon these topics, but we do not dwell exclusively upon competition preparation. Sam will certainly draw upon his 10 years of competition cooking but it will be with a view toward teaching you how to be a better cook in your backyard rather than how to win a contest.
You will start your day at 8:00 a.m. with Bloody Marys and help cook a huge country breakfast of egg strata, sausage, sawmill gravy and home made sourdough biscuits, all cooked in Dutch ovens in hot coals. Then we will discuss Dutch oven and sourdough cookery for a while.
Next, we will begin your barbecue education. This is not a grilling class, although we will certainly discuss and demonstrate grilling techniques. We will teach you the secrets of low and slow cooking with wood, charcoal and smoke. We will demonstrate, and you will prepare, rubs, sauces, marinades, mops, injections, bastes, and slathers. You will prepare the side dishes that we serve in the restaurant and some that we don’t. You will learn how to prepare and smoke baby back ribs, how to make a St. Louis cut, a beer can chicken, pork shoulders, butts, briskets and more. You will have snacks and lunch. ( BYOB).
At 6:00 p.m.,( or thereabouts), everything comes off the smokers and you will sit down to some serious eating. ( Those other 3 meals were just for fooling around). That will be followed by Dutch oven cobblers and, in the heat of the summer, maybe some home made peach ice cream. Then you may want to take a nap in the hammock or go play with the llamas.
After all that, you will receive your graduation certificate , hat , apron and booklet. In other words, Sam and the Lost Mountain BBQ Team members and employees of Sam’s BBQ1 all want to do everything possible to give you an enjoyable, memorable and informative experience.
